Ingredients
1 lb. crab meat
1 egg
1/2 cup crackers
1/3 cup fresh parsley
2 tablespoons mayonnaise
pepper
Instructions
Remove any shell from crab. In a medium bowl, mix together crushed crackers, egg, parsley and mayonnaise. Add salt and pepper to taste. Mold into six patties, approximately 1/2 inch thick.
Fry the crab cakes in a skillet coated in olive oil, turning once until both sides are browned nicely (about 10 minutes).
