Swiss German Sausage and Cabbage - TastyPlanner.com

I sort of accidentally made this one day, and my husband raved he’d had nearly exactly the same thing at a youth hostel in Switzerland. Great fall/winter dish, made easy in the crock pot.
Ingredients
2 lbs. smoked sausage, brats, or kielbasa. Ideally Swiss sausage.
2 heads of cabbage, medium sized, about
1 large or two small onions
1/4 apple juice or apple cider
2 T apple cider vinegar
1 tsp. ground brown mustard (sub yellow in a pinch), 1 tsp. thyme, 1 tsp. brown sugar
2 t. fresh ground black pepper
1 t. grey sea salt (for best flavor and nutrition)
1 T. butter
Instructions
Slice the sausage into 2” thick rounds and brown in a little butter.
While it’s browning, slice the cabbage with a sharp knife or cleaver, or run it through the food processor. I find slicing it easier. DON’T use a bagged slaw mix—it will be too dry.
When the sausage is done browning, place all ingredients except the butter into the crock pot and mix. Pour off the juices from the pan into the pot as well, and top with the additional butter.
Cover and set at LOW for 6-8 hours.
Serve with crusty bread, slices of your favorite cheese, and a seasonal fruit. Pears are good with this.
