Hershey’s Mississippi Mud Cake. I always took it to parties and people loved it!
Ingredients
1/2 c. butter/margarine
1 c. sugar
1 t. vanilla extract
3 eggs
3/4 c. flour
1/3 c. Hershey's cocoa
1/2 t. baking powder
dash salt
1 package (10 1/2 oz.) mini marshmallows
Buttercream frosting
6 T butter/margarine, softened
Hershey's cocoa
1/3 c. for light flavor
1/2 c. for medium flavor
3/4 c. for dark flavor
2/3 c. confectioner's sugar
1/3 c. milk
1 t. vanilla extract
Instructions
Heat oven to 350. Grease rectangular pan, 13×9”.
In large mixer bowl cream butter, sugar, and vanilla until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, cocoa, baking powder, and salt; add to creamed mixture. Spoon batter into prepared pan.
Bake 15-18 minutes or until top is barely soft to the touch. Meanwhile, prepare frosting.
Remove cake from oven; immediately cover top with marshmallows. Return cake to oven 2-3 minutes or until marshmallows are soft. Gently spread marshmallows over cake with spoon; immediately spread frosting over top.
Cool thoroughly before cutting into squares.
