Chicken and Dumplings - TastyPlanner.com

Very filling and easy to make
Ingredients
3 Cups water
3 boneless skinless chicken breasts
2 (10.75 ounce) cans condensed cream of celery soup or cream of chicken soup depending on desired flavor
Salt and pepper to taste
3 Cups chicken broth
2 (12 ounce) package refrigerated biscuit dough
Instructions
1. In a large pot over high heat, combine the chicken with 3 cups water and boil for 15 to 20 minutes. Remove chicken and allow it to cool, then pull it apart into bite size pieces.
2. Reduce heat to medium, and add the cans of condensed soup and chicken broth. Season with salt and pepper. Pull the biscuit dough into pieces, and add to the soup. Simmer over medium heat for 7 to 8 minutes, or until the dough is cooked through. When you cut into the dumplings they should have a slight brown tint in the middle. Cooking times may vary to achieve this.

This is one of my top favorite foods. I make this at least once a week and everyone I make it for loves it. I am not a big meat eater so I have substituted the chicken with button mushrooms before. Another thing you can do which is delicious is add a can of sweet corn. It becomes a cross between chicken and dumplings and corn chowder. There are so many options to mix this meal up its really endless.
My daughter loves it as well so in my opinion its great for kids. Its also very filling. I have a friend who swears if you make it with 1 cup chardonnay and 1 less cup of broth. I have never tried it but am curious. Quick suggestions on the biscuits, I have made them from scratch and they are wonderful but if you use canned ones cut them in 4ths and flatten them a little. They cook down best this way.
