coleslaw with a country and tart flavor. 2 pts per serving

Ingredients
1/2 cup dried cranberries
1/8 tsp black pepper
1/2 tsp table salt
2 tsp walnut oil
2 medium apples, Granny smith, cored and coarsely grated
2 cup savoy cabbage, or Napa, finely chopped
2 cup jicama, coarsely grated
2 medium shallots, minced or finely grated
2 tbsp honey
2 tbsp apple cider vinegar
Instructions
1. In a large bowl, whisk together apple cider vinegar, honey, walnut oil and salt. 2. Toss in cabbage, jicama, apples, shallots, and dried cranberries. Season with pepper.
