Sausage-filled peppers are a simple, quick meal for afternoons where you want something a little different…this is my mother’s recipe. The more peppers you have, the more you can serve-the mixture will fill about 6 peppers.
Ingredients
1 pkg sausage (any flavor-just beware of the spice content, also maple
will give the dish a much sweeter taste)
4 green peppers
1 jar of cheez-whiz
1/2 tomato diced
2 cups prepared)
Instructions
1. Brown and ground sausage in skillet. 2. Slice only the top of the peppers leaving the stem in tack. Remove seeds and extra siding inside the pepper. 3. Boil pepper tops and peppers in about 4 quarts of water (be sure it’s deep enough to cover the peppers) 4. At the same time, in a separate pan, boil rice as directed. 5. Dice tomato. 6. Add tomato and cheez-whiz to sausage. When rice is finished, mix it in as well. 7. Remove peppers and set them in a casserole dish (if they are not even on the bottom, use a 9×9 dish and prop them up against each other or against the sides of the dish) 8. Add mixture to the insides of the peppers, stuffing each one full. 9. Add the tops back on the peppers and bake for about 20 minutes. 10. Remove and enjoy!
