Weekend Brunch Casserole - TastyPlanner.com

This easy breakfast is a great way to start the day. Sausage, eggs and cheese are layered over a crescent roll base for a delicious and filling meal.
Ingredients
1 pound Bob Evans or Owens® Original Recipe Sausage Roll
2 cups shredded mozzarella cheese
1 (8 ounce) can refrigerated crescent dinner rolls
4 eggs, beaten
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
1. Preheat oven to 425 degrees F. Crumble and cook sausage in medium skillet over medium heat until browned. Drain.
2. Line bottom of greased 13×9 inch baking dish with crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients in medium bowl until blended; pour over sausage.
3. Bake 15 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.

This was really delicious. It took longer than 15 minutes to cook and I added some onions and green pepper.
a comment to winkyboy. You can modify this recipe to be more organic and lessed processed by making your own dough, buying fresh mozzarella and grating it up yourself. cage free eggs, take out the sausage and add onions green peppers and mushrooms
The family loved this dish. It did take longer to bake than indicated (which may be just a difference in ovens). I would say it took almost 25-30 minutes for the dish to bake.
I substituted precooked sausage patties – I thawed them, chopped them up, then browned them a bit to get rid of extra grease. This worked very well.
