Classic Italian peasant soup w/ pasta and beans.
Ingredients
2 tbsp olive oil
1 tbsp butter
4 oz pancetta (diced)
1 tbsp garlic (minced)
1 medium yellow onion (diced)
1 large bunch Italian parsley (finely chopped)
2 tbsp tomato paste
2 quarts chicken broth
4 sprigs thyme
1 bay leaf
3 cups kidney beans
1 cup elbow macaroni
Instructions
1. In a dutch oven, heat oil and butter and add pancetta, garlic and onion. Cook 5-10 minutes on high until onions are soft.
2. Reduce heat to medium and add parsley and tomato paste, cook additional 10 minutes.
3. Add broth, thyme, bay and beans. Cover and bring to a boil. Reduce heat and simmer for 10 minutes.
4. Discard loose herbs. Puree 1 cup of the bean mixture in a blender until smooth. Set aside.
5. Add macaroni and boil with the lid on until it is tender, about 8 minutes.
6. Return the puree to the remaining soup in the saucepan and stir well. Season the soup with salt and ground black pepper.
7. Serve with Parmesan cheese.
