Corn Bread

Ingredients
1 cup yellow cornmeal
1 cup flour
2 t sugar
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 c. shortening
1 egg
Instructions
Heat oven to 425. Grease square pan, 8×8x2 or 9×9x2 inches. Blend all ingredients about 20 seconds. Beat vigorously 1 minute. Pour into pan. Bake 20 to 25 minutes or until golden brown.
Some variations:
Make the cornmeal 1-1/4 c., and the flour 3/4 c. For the flour, substitute some part of it as whole wheat flour (not more than half the flour).
The traditional way to make quick breads is to mix all dry ingredients in one bowl, mix well all wet ingredients in another bowl, then combine and only stir until just blended. That’s probably the way I do this recipe.
