Coq Au Vin - TastyPlanner.com

Coq au Vin is a classic French dish. There are various different ways to prepare it but basically you´ll need to cook chicken in red wine. It´s easy and delicious.
Ingredients
1/2 pound of bacon slices
20 pearl onions
3 pound chicken parts, skin on
6 garlic cloves, peeled
2 cups chicken stock
2 cups red wine (burgundy or zinfandel)
2 bay leaves
1 pound mushrooms, roughly chopped
Instructions
Cut the bacon small pieces. Brown bacon on medium high heat in a dutch oven big enough top hold the chicken, about 10 minutes. Remove the cooked bacon and set aside. Keep the bacon fat in the pan
Add onions and chicken, skin side down. Brown the chicken well on all sides, about 10 minutes. Halfway through the browning, add garlic and sprinkle the chicken with salt & pepper.
Add the chicken stock, wine and herbs. Drink some wine yourself. Add back the bacon. Lower heat to a simmer. Cover and cook for about 20 minutes, or until the chicken is tender and cooked through. Remove chicken and onions to a seperate platter. Remove the bay leaves, herb sprigs and discard.
Add mushrooms to the remaining liquid and turn the heat to high. Boil quickly and reduce the liquid until it becomes thick and saucy. Lower the heat, stir in the butter. Return the chicken and onions to the pan to reheat and coat with sauce.
Adjust seasoning. Best served with potatoes or over egg noodles.

Liked it! Just finished eating – couple of points, there’s no guide on the amount of butter or the herbs to be used. I took a decent sized knob of butter and a generous shake of mixed “italian herbs”. Worked pretty well for us! Also – served it with a lovely wholemeal loaf and butter rather than noodles / potatoes. Thanks for the recipe!
