This chili is rocks.
It’s the best I’ve ever made, and most people really seem to love it.
It started as a vegetarian recipe…but i’m a meat lover.
Recipe Source: Started as an Emeril recipe..modified.
Ingredients
6 tablespoons olive oil
1 large chopped yellow onion
2 chopped red bell peppers
6 garlic cloves minced.
3 anaheim peppers finely chopped
2 red chillies, minced
1 pound Baby Bella Mushrooms
1 green zucchini
2 yellow zucchini
2 cups frozen corn
3 tbl chili powder
2 tbl ground cumin
2 tbl coarse black pepper
1 tbl paprika
1 tbl sea salt
2 tsp red cayenne pepper
1 can organic peeled whole tomatoes (seeded, drained, chopped)
1 can chili beans (drain)
2 can black beans (don't drain)
1 lb. grass fed organic ground beef
1 8oz. can tomato sauce
1 cup water
Instructions
In a large pot, heat 1/2 the oil over medium high heat. Get the peppers, onions, chillies and garlic going for a few minutes. Add the zucchini and mushrooms. Stir often for about 5 minutes. Add the all the spices except half the salt, half the cumin and the paprika. Cook 2 more minutes to integrate the flavors. Add the tomatoes and tomato sauce, heat to boiling. Transfer to a crock pot.
In a large skillet on medium high, heat the beef until browned with the rest of the olive oil. Drain the grease. Add half the salt, black pepper, cumin and the paprika to the beef. Cook 1 more minute.
Add the beef and beans to the crock pot. Stir in the frozen corn (it heats really quick with all those other hot ingredients.
Heat on low in the crockpot for about an hour.
Serve with corn chips, sour cream, cheese…whatever you want, this stuff will knock your socks off.
The ground beef is totally optional. It makes a great vegetarian chili without it.
