Reduced-Fat Macaroni and Cheese

Ingredients
8 oz elbow macaroni
16 oz cottage cheese
2 tbsp flour
2 cups milk
1 cup sharp cheese
1 tsp salt
1/4 tsp pepper
1/4 cup Parmesan cheese, grated
Instructions
Preheat oven to 375*F. Greese oven-save casserole. In medium saucepot, cook macaroni. Drain.
In food processor, puree cottage cheese until smooth.
In saucepan, blend flour with 1/4 cup milk, slowly stir in remaining milk. Cook over medium heat until thickened and boils. Remove from heat and stir in cottage cheese, sharp cheese, salt, pepper, and nutmeg.
Add macaroni to casserole and cover with cheese sauce. Bake for 20 minutes.
