Mom’s Pancakes
Ingredients
2 Cups all purpose flour
2 tsp. baking powder
3 tsp. sugar
1 tsp. salt
2 cups milk
1/2 stick of butter, melted & cooled slightly.
3 eggs
Instructions
Stir first 4 ingredients in large bowl. Wisk milk, melted butter and eggs in a medium bowl. Add dry ingredients and wisk until just blended but small lumps remain. Let stand for 30 minutes.
Melt 1 Tbls. Butter in a heavy large skillet over medium high heat. Drip by ¼ cup scant cupfuls into skillet. Cook pancakes until bottom are golden brown and tops are bubbly. Turn and cook the other side.
