Chicken Enchiladas - TastyPlanner.com

Chicken enchiladas for 2 to 4 people.
Ingredients
1 can red or green enchilada sauce
1 container fat free sour cream
1 tablespoon butter
1 medium onion (optional)
1 teaspoon chili powder
2 cups chopped cooked chicken (approximately 3 chicken breasts)
1 can (4 oz.) chopped green chiles
6 flour tortillas
1 cup shredded Cheddar cheese
Instructions
Heat butter in sauce pan. Add onion, chili powder, chilies, cooked chicken and enough sour cream to make ingredients moist. Stir until evenly mixed.
Spread a small amount of sour cream in a 9” x 13” pan, enough to lightly cover the bottom. Spoon about 1/4 cup of the chicken mixture into each tortilla. Roll up each tortilla and place in dish.
Spread sour cream evenly over tortillas. Pour enchilada sauce over tortillas. Sprinkle cheese on top. Bake at 350 degrees for 25 minutes.
