A scrumptious pasta dish with a variety of flavor
Ingredients
1/2 pound fettucine or linguine, cooked al dente
1 pound boneless, skinless chicken breast or tenders, cut into thin strips
2 Tablespoons EVOO
1 medium onion
2 cloves garlic, minced
1 Green Pepper, diced
1 Yellow pepper, diced
1 zucchini, sliced
1 pound fresh mushrooms, sliced
4 medium tomatoes, diced
1/2 small can black olives, sliced
1/2 2 oz jar capers
Instructions
Cook pasta according to package directions, drain. Meanwhile, cook chicken in a large skillet with 1 T EVOO until done. Remove from pan. Add second Tablespoon of EVOO and add onion, garlic, green pepper and stir-fry until onion starts to get translucent. Add zucchini and tomatoes, stir-fry for another 3 or 4 minutes, until tomatoes release their juices. Add olives and capers, stir-fry for another minute. Add chicken back in. Add pasta to pan and stir until heated through. Cover and simmer for 3 to 4 minutes. Remove from heat and serve. Great with a romaine lettuce salad and a crusty Italian bread or focacchia.
