Shredded Chicken Nachos

Ingredients
3 tbsp olive oil
2 lb chicken
4 tsp chili powder
1 tsp salt
2 cups onion, thin sliced
1 tbsp garlic, minced
2 cups chicken stock
4 tsp lime juice
4 tbsp butter
4 tbsp flour
2 cups milk
1 can green chilies
2 cups shredded sharp cheese
1/2 tsp salt
1/4 tsp cayenne pepper
1 bag tortilla chips
2 cups Monterey jack cheese, shredded
1/4 cup green onions
3/4 cup sour cream
1/2 cup jalapenos
2 tbsp Cilantro
Instructions
Heat oil in pan over medium-high heat. Season chicken with chili powder and salt. Sear each side for 3 minutes. Add onions and saute for 3 minutes, add garlic and saute for 1 minute. Pour stock over chicken and bring to boil. Reduce heat to low and cook covered for 1 hour. Shred chicken and cook for 30 more minutes covered. Add lime juice when done.
Preheat oven to 400*F. Place tortilla chips in large casserole dish, top with chicken and monterey jack cheese.
In a medium sauce pan, melt butter over medium-high heat and whisk in the flour. Cook for 2-3 minutes. Do not allow the flour to color. While whisking, add the milk. Place tortillas in oven. Add the green chilies and bring to boil, 5 minutes. Add cheddar, salt, and cayenne pepper and stir until cheese is melted.
Pour cheese sauce over tortillas and cook in oven for 2 minutes. Garnish with green onions, sour cream, jalapenos and cilantro.
