Costco Spinach Ravioli with Green Beans - TastyPlanner.com
Chef: Lazy_pragmatist
Easy, good, and reasonably nutritious pasta dish. Makes 4 servings of 720 calories each (585 pasta + 135 sauce). Can be halved.
Ingredients
1 package Monterey Pasta Company organic spinach & cheese ravioli from Costco (package has 2 sections)
1 26-oz jar Classico Spicy Tomato & Pesto pasta sauce
1 lb fresh green beans (or substitute frozen)
Instructions
Put water for the pasta on to boil. This will take around 10 minutes. Meanwhile:
Place the sauce in a small covered saucepan on low heat.
For fresh green beans, wash and cut the stems off the beans. Prepare either a steamer basket (by putting it on the stove over heat with some water) or a Zip ‘n Steam bag.
When the pasta water boils, add the ravioli. Do not turn the heat down when you do this, even though package instructions will tempt you to do so – the cold refrigerated ravioli will require the water to use all available heat energy to come back to a boil in the mere 5 minutes the pasta is supposed to cook.
Immediately after putting the pasta in, add the green beans to the steamer basket, or put the Zip ‘n Steam bag in to cook – either method should take about the same amount of time as the pasta.
Set a timer for 5 minutes.
When the timer rings, drain the pasta. Immediately remove the green beans from their cooking arrangement to prevent them from overcooking. Place pasta and green beans on plates and pour the sauce over the pasta.
