A nice, crusty bread to munch.
Ingredients
2 T active dry yeast
3/4 c warm water (105-115 degrees)
2 cups warm water
3 t sugar
3 T olive oil
1 t salt
3 c white flour
4 c whole wheat flour
Instructions
Mix the yeast in 3/4 cup water to dissolve.
Whisk in 2 cups water, the sugar, olive oil, salt, and white flour.
Stir in whole wheat flour. More flour can be added if dough is too sticky.
Turn dough to lightly floured surface and knead for 5-10 minutes until the dough is nice and elastic. Place in a greased bowl and flip the greased side up. Cover it and let it rise in a warm place for 1 hour.
Punch down dough, divide in half, and roll each half into a rectangle about 18×9 inches. Roll up tightly and pinch ends to seal. Fold ends under.
Put the loaves seam side down in greased bread pans. Brush top of bread with Smart Balance. Or butter. Or margarine. Your choice. Let loaves rise for 1 hour.
Heat oven to 425. Put the loaves on a low rack so the top of the bread is in the centre of the oven. Do not let the pans touch each other or the sides of the oven. Bake for 25-30 minutes. Loaves will be golden brown and sound hollow when tapped. Remove from pans straightway and allow to cool on wire racks.
VARIATIONS:
Apple Cinnamon Bread – Substitute 1 cup oats for one of the cups of white flour. When you roll out the dough after the first rising, sprinkle finely chopped apples and cinnamon-sugar on before rolling it up to put in the pan.
Seedy Bread – Add 1/2 c sesame seeds, 1/2 c sunflower seeds, 1/2 cup wheat bran before adding flour and reduce flour as needed (by about 1 1/2 cups).
