Rice Taco Salad - TastyPlanner.com

A little healthier version of Taco Salad that is quite filling.

Serves: 4
Ingredients
1 pound ground beef
1 package Taco Seasoning
2 cups Rice
1 can of refried beans
2 cups of chips (tortilla works best)
2 cups Lettuce
1 cup cheese (optional)
Instructions
cook the taco meat and season. Boil the rice. In an 8×8 container spread the beans on the bottom. Layer the chips over the beans and then the cooked rice. On the rice lay the taco meat with the lettuce next and salsa to top. Add the olives, sour cream and cheese if desired. Enjoy!
