A delicious soup that is sure to please anyone looking for a hearty meal. It’s a potato, lentil, carrot soup that is good for lunch or dinner.
Ingredients
7 small potatoes (chop into small pieces)
1 cup of brown lentils
2 medium carrots (chop into thin wheels)
1 cup of white onion (diced)
½ tsp of Vegeta seasoning
½ tsp of chicken seasoning
1 tbsp of garlic olive oil.
1/8 tsp of hot curry seasoning
8 cups of water
Instructions
Place ingredients into four quart or larger pot and bring to a boil. Reduce heat to low and simmer for 25 to 30 min. or until lentils are soft. Serve with saltine crackers.

I used powdered vegetable stock instead of whatever “Vegeta” is, and powedered chicken stock instead of the chicken seasoning. Also crushed garlic instead of the garlic olive oil, and a few extra spices. Also fried the spices, garlic, and onion together before adding the other ingredients for a bit of extra taste. It was gorgeous! Have frozen lots to eat later too – definitely making this one again.
