Thought this would be a good combo, and it came out delicious. The smell in the house while it was cooking was AMAZING! I plan to post some more full meals in the future so keep your eyes open!
Ingredients

Butternut rice
*****************
1 small butternut squash
2 Tbs olive Oil
1 small onion, diced fine
2 tbs dried thyme
2 cups jasmine or basmati rice(brown if available)
4 cups chicken or vegetable broth
1 sea salt and fresh ground pepper to taste

Garlic roasted fingerlings

1 lb fingerling potatoes
3 garlic clove, crushed
5 tablespoon extra-virgin olive oil
1 1/4 teaspoon sea salt
3/4 teaspoon fresh coarse ground black pepper
3 cup fresh spinach leaves, chopped

Barbecue Chicken
*************************
1 lb boneless skinless chick breast
1 homemade barbecue sauce(found here http://tastyplanner.com/recipes/22635-healthy-homemade-bbq-sauce)
Instructions
for the rice:
start your squash according to directions below
for the potatoes:
Drizzle with oil and toss. Sprinkle with salt and pepper and toss to coat. add garlic and mix well.
Place potatoes in single layer in shallow baking dish or pan.
Roast, covered, 45 minutes.
Remove from oven. Toss with spinach & return to oven 1-2 minutes until spinach has wilted.
for the rice:
peel butternut squash, cut in half and seed. brush with part of the EVOO the sprinkle with sea salt and pepper. Either bake until done or grill on the bbq for added flavor until done, meanwhile put remaining EVOO in a sauce pan and add onion and rice, stir to coat then cook over medium heat until rice starts to brown. add thyme and cook until fragrant. pour in chicken broth and cook until done. remove from heat and chopped into 1/2 inch chunks. add squash to rice and mix well. pour mixture into glass baking pan and cook at 400 degrees for 30 min or until top starts to turn golden brown.
for the chicken:
when there is about 15 mins left on your rice and potatoes, cut each breast in half lengthwise(like you’re butterflying them but cut all the way through). turn grill to 400 degrees(or however hot you like to grill at) place chicken on grill when ready then, brush on the homemade bbq sauce. cook flipping once and coating other side until cooked through. This takes about a total of 10 mins when cut in half.
