Salmon with Tomato Basil Relish - TastyPlanner.com

This simple, healthy salmon recipe will be a hit at any dinner table.

Ingredients
1/2 pound salmon
1 cup cherry tomatoes, sliced in quarters
1/2 small shallot, minced
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon apple cider vinegar
2 tablespoons fresh basil, finely chopped
Instructions
1. Turn oven on to 500 degrees 2. Cut fish into 2 pieces, leaving skin on; rinse and pat dry with paper towel 3. Place fish skin side down on a metal baking sheet 4. Rub fillets liberally with olive oil, then sprinkle with salt 5. Reduce oven temperature to 275 degrees, then put sheet with salmon on lowest rack 6. Roast 8 to 13 minutes –so that centers of thickest part of fillets are still translucent when cut into with a pairing knife 7. To make relish, stir together remaining ingredients from above in a medium size bowl 8. Remove salmon from oven, transfer to plates and serve with relish

Sorry all, for some reason the ingredients with ½ in them didn’t show up after submitting this recipe – i’ve changed them to 1/2 instead – I will alert the Tasty Planner admin to this coding error.
I cooked it and it was delicious. I used white wine vinegar instead and it tasted delicious. We ate it with coconut rice and green beans. A must cook!
Very delicious! I let the relish marinate for about a 1/2 hour before eating and it came out wonderfully. I served it with cous cous and asparagus. Yum! :)
Wow was this good. I tossed the relish ingredients whole into the food processor, gave it 7 or 8 pulses and voila, perfect relish.
I took Paula’s advice to serve it with some fun rice, so I added pinches of cumin, cinnamon, curry, sugar and salt along with pine nuts and raisins into my rice.
All together this was a fab recipe!
