Healthy but DELICIOUS!

Ingredients
3/4 cup of bread flour
3/4 cup of all purpose flour
3 tbsp sugar
1/4 tsp salt
2 1/2 tsp baking powder
1 tsp baking soda
1 tbsp maple syrup
1 whole egg
1 cup buttermilk
3/4 cup of 2% milk
2 1/2 tbsp canola oil
1 cup of berries or chopped fruit
Instructions
In a large bowl, combine all dry ingredients. In a medium bowl, combine remaining ingredients except berries/fruit and mix well. Add wet ingredients to dry ingredients and mix until smooth.
Lightly coat griddle or large saute pan with canola oil. Place on burner over medium heat until hot. Pour 3 tablespoons of batter on griddle and sprinkle with 1 tablespoon of berries/fruit. Cover berries with 1 additional tablespoon of batter and cook until bubbles. Turn and cook until bottom is brown.
3 pancakes = ~335 calories
