I can’t remember where I found this recipe, but it has become my family’s favorite as well as friends. I live in Cajun country and only began trying these kinds of dishes when I moved here but evidently I’ve gotten pretty good at it! :)
Ingredients
1 lb. uncooked chicken, cubed
1 lb. Andouille sausage, cubed or diced
28 oz. can diced tomatoes, undrained
1 onion, chopped
1 seeded bell pepper, chopped
1 c. chicken broth
2 tsp. dried oregano
2 tsp. Cajun/Creole seasoning
4 tsp. hot sauce (depends on your taste)
2 bay leaves
1/2 tsp. dried thyme
1 lb. shrimp, pre-cooked and peeled
Instructions
Combine all ingredients (EXCEPT for shrimp) in a crock pot and stir to combine it well.
Cook on high for three hours (or low for seven hours).
Add shrimp during last 10-20 minutes of cooking, you want to heat it through.
Serve over rice.
TIP: This freezes very well and is easy to reheat on the stove.

OK – but this is more like Cajun stew than traditional jambalaya. Perhaps including the rice with the cooking would improve the overall recipe.
