<p>A gently spiced cake that is wonderful for a not-overly-sweet dessert.</p>

eggs, beaten

c sugar (can cut in half)
1/2
c oil

tsp
vanilla

C flour
2
tsp
soda
2
tsp
cinnamon
1/2
tsp
nutmeg
1/4
tsp
salt
4
c diced peeled apples
1
c chopped walnuts
<p>In a large mixing bowl, beat together eggs, oil, sugar, and vanilla.</p>
<p>Combine flour, soda, cinnamon, nutmeg, and salt. Mix into batter.</p>
<p>Fold in apples and nuts.</p>
<p>Spread into a 13×9 pan. Bake at 325 for 50-60 minutes or until cake tests done. Cool.</p>
