Southern Cornbread (with Cajun option) - TastyPlanner.com

This is a very good basic cornbread recipe. I’ve added a few ingredients, at the end, to spice it up a bit if you want to make a Cajun cornbread… which goes really good with my Jambalaya recipe. You can safely eliminate the sausage and cayenne to make good old fashioned Southern Cornbread.
Ingredients
1 c. self-rising cornmeal
1/2 c. self-rising flour
1/8 tsp. cayenne pepper (optional)
3/4 c. buttermilk
2 eggs
2 tbs oil
1 lb. of Andouille sausage, cooked and diced or minced (optional)
Instructions
Preheat oven to 350°F.
Combine cornmeal, flour and cayenne pepper. Stir it well to distribute the pepper, should you decide to use it.
Add buttermilk, eggs and oil and mix well.
Fold in sausage, if you use it.
Pour batter into a greased shallow baking dish, (I use an 8×8 glass dish).
Bake for approximately 20 to 25 minutes, and serve with a lot of butter.
