Ingredients
1 box lasagna noodles
1 box or gathering assorted mushrooms, yummier if wild
2 zukes or summer squash
1 carton frozen spinach
1 large part skim ricotta cheese
1 bag shredded cheese, flavor of choice
1 EVOO
1 salt
3 garlic cloves
1 jar favorite pasta sauce, or homemade
Instructions
Sautee diced garlic in evoo in pan until translucent. Add mushrooms first and cook until tender. Add other veggies. Cook until 1/2 done.
Mix the unthawed frozen spinach in with the ricotta cheese.
Boil lasagna noodles (if not using half cooked) until half done.
Spray large casserole dish with Pam. Layer the lasagna in successive layers: 1 layer noodles, then ricotta mix, then veggies, then sauce, then sprinkle cheese. Repeat until lasagna is built; cook until bubbly and the sides of the noodles are starting to crisp.
Serve with a fresh crunchy salad & red wine. Yum!
