Lobster Rolls - TastyPlanner.com

Ingredients
1 pound cooked lobster meat, cut into 1/2-inch pieces
2 stalks celery, finely chopped
4 scallions, finely chopped
1/4 cup chopped fresh parsley
1/2 cup mayonnaise
1/4 cup plain whole-milk yogurt
2 tablespoons lemon juice
1 teaspoon cayenne pepper
salt and pepper, to taste
4 hot dog rolls, pan-grilled until golden
Instructions
In a bowl, combine the lobster, celery, scallions, and parsley. In a small bowl, mix together the mayonnaise, yogurt, lemon juice, cayenne pepper, salt, and pepper. Stilr well. Spoon the dressing over the lobster and mix thoroughly. Taste for seasoning and add more salt and pepper if you like. Spread both sides of the rolls with a faint coating of soft butter. Heat a cast iron pan over medium heat for 1 minute. Place the rolls buttered side down in the hot pan. Cook the rolls until the undersides are golden brown. You can press them down with a metal spatula to thin them as the brown. Turn them over and toast the other side. Fill the rolls with lobster salad and serve at once.
