Masala chai is a spiced Indian tea. This recipe make 1 gallon of masala chai that can be served warm or cold. The person who developed this recipe keeps a stock pot full of her chai on the stove all winter long. There really is nothing better than brewing your own.
Ingredients
3 qts of water
20 black tea bags (Red Rose is my favorite)
5 cinnamon sticks
1 Tbs whole allspice
1 (or less) Tbs whole cloves
1 in. chunk ginger root, minced
1/2 Tsp nutmeg
1/2 Tsp mace
1 Tsp black peppercorn
1 Tsp black cardamom
4 Tbs vanilla
1 cup honey
2 quarts soy milk
Instructions
In a 2 quart sauce pan bring water to a slow boil and steep tea (with tags removed) and spice ingredients. Remove tea bags after about 10 minutes but continue to steep the remaining spices for 20 more minutes. Strain and add honey and vanilla and stir until dissolved. Pour contents into a gallon container. Cool until room temperature, or add ice to speed process. Fill the rest of container with soy milk. Serve warm or on ice.
Note: 1/2 Tsp mace and 1/2 Tsp nutmeg = 1 Tsp whole Nutmeg 1 Tsp cardamom = 8 cardamom pods, cut Soy milk can be replaced with water, almond milk, or flavored soy milk; do not substitute regular milk due to spoilage problems and taste.
