Brussel Sprouts with Currants and Pine Nuts - TastyPlanner.com

Peel away the outer leaves from trimmed fresh Brussels sprouts, reserving the leaves and centers. (or not)

Ingredients
1 1/2 lb Brussels Sprouts, trimmed
1 tbsp pine nuts
1 tbsp butter
1/4 cp finely chopped shallots
2 tbsp dried currants
1 tsp chopped fresh thyme
1/4 tsp salt
1/4 tsp fresh ground pepper
1/2 cp fat-free chicken broth
Instructions
Separate sprouts into leaves, leaving just the center intact. Set aside.
Heat skillet over med-high heat. add nuts to pan; cook 2 min. or until toasted, stirring constantly. coarsely chop nuts.
melt butter in pan over med-high heat. add shallots to pan; saute 1 min or until golden, stirring frequently. stir in sprouts, currants, thyme, salt, and pepper. Toss to combine. Add broth. Cover, reduce heat, and cook 7 min. Increase heat to med-high, uncover, cook 4 min or until liquid evaporates and centers are tender, stirring frequently. Remove from heat. Sprinkle with nuts.
