Phil's Barbecued Squid - TastyPlanner.com
Chef: Phil Hoskin
This is a recipe for Barbecued Squid that I found in Perth, Western Australia. Barbecued Squid is a low-fat, high-protein seafood meal.
Recipe Source: Perth Australia
Ingredients
8 - 10 bamboo skewers
1/4 cup soy sauce
3 tablespoons fresh lemon juice
1 tablespoon chopped fresh coriander leaves
1 1/2 teaspoons freshly grated ginger
2 red chilies, chopped
2 green spring onions, chopped
Instructions
Soak the bamboo skewers in water for at least 3 hours or overnight. In a large bowl, mix together the ingredients for the marinade.
Thread the squid strips onto the skewers and marinate for about 1 hour. Place over moderate coals and cook the squid briefly about 2-3 minutes.
If the squid is overcooked it will be tough and dry.
HINT: When buying fresh squid, choose those with firm flesh that is white and almost translucent. The edible parts are the tentacles and the sac-like body.
