Corny's Zucchini Casserole - TastyPlanner.com

A popular dish at family dinners.
Ingredients
4 cups zucchini ; cubed and cooked until crisp tender
1/2 cup chopped onion ; (or more - can be microwaved until tender)
1 carrot ; large, grated
2 cups sharp cheddar ; grated
1 can mushroom with garlic soup ; (or cream of chicken, celery, mushroom)
1 cup sour cream
1 box stuffing ; (any brand, any flavor, such as Stove Top Herb)
1/2 cup butter
Instructions
Melt butter and mix with stuffing and seasonings packet if there is one. Mix first 6 ingredients and put in 9×13 baking dish. Top with stuffing. Bake uncovered at 350 until bubbly, 25-30 minutes.
