A wonderful side dish or add cooked meat to casserole for a full meal.
Ingredients
1 package Large elbow pasta
1 package Sharp Cheddar cheese ; grated
2 ½ tbsp. Unsalted Butter
flour
Milk (or: mix cream & lowfat milk)
8 oz. Velveeta Cheese, cubed
ground nutmeg
Instructions
(bring milk to room temperature or pop into microwave for a few seconds to take away chill)
Preheat oven at 375 degrees. Heat salted water for pasta, while making sauce, cook pasta.
In a medium Sauce pan, melt the butter over medium-high heat. Quickly whisk in the flour for about 2 minutes. Gradually add the room temperature milk, whisking constantly until thick, about 5 minutes. Turn heat down to medium-low, Add in cubed Velveeta, stir in until melted. Add nutmeg, and salt & pepper to taste.
Add a ladle of salted pasta water before draining pasta. Add pasta to sauce, and combine.
Butter a 9×13 casserole dish. Layer noodles & sauce, then cheese.
Place in oven and cook until light brown on top, about 30-40 minutes
