Ingredients
4 tbsp paprika
2 tbsp Freshly ground black pepper
2 tbsp coarse salt (kosher or sea salt)
1 tbsp chili powder
2 tbsp brown sugar
3 pinches cayenne pepper
24 oz pork tenderloin, trimmed, cut into 3- or 4-oz pieces
Instructions
1. Put cast-iron skillet into oven and Preheat oven to 400 degrees. Combine spices in a large, shallow dish. Add pork, and turn to coat evenly with chili mixture. 2. Remove cast iron skillet pan after 7 minutes and heat on stove over medium-high heat,brush with oil. Add pork, and cook until seared, 2 to 3 minutes per side. 3. Transfer skillet to oven. Roast pork to desired doneness, 17 to 18 minutes for medium. Let stand for at least 5 minutes, then cut into 1/2-inch-thick slices. Serve with pan juices.Similar recipes
