Ingredients
1 1/4 cups dried adzuki bean, small red beans, or black beans picked over and rinsed
1/4 teaspoon Freshly ground black pepper
2 tablespoons mellow white miso
3 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon grated fresh ginger
3 scallions, diagonally sliced
2 medium cucumbers, peeled, halved, seeded, and cut into thin diagonal slices
1 small carrot, shredded
1/4 cup walnuts, coarsely chopped
Instructions
1. Place the beans in a bowl. Add water to cover by 2". Cover and let stand overnight.
2. Drain the beans and place in a medium saucepan. Add water to cover by 2" and bring to a boil over high heat.
3. Stir in the pepper. Reduce the heat to low, cover, and simmer, stirring, for 30 minutes, or until very tender.
4. Drain the beans and place in a serving bowl for 20 minutes.
5. Meanwhile, in a large bowl, whisk together the miso, orange juice, lemon juice, oil, and ginger. Stir in the scallions, cucumbers, carrot, walnuts, and beans.
6. Let stand for 15 minutes to blend the flavors.
