Dipping sauce that goes great with Scotch Eggs
Ingredients
2 fresh garlic cloves, peeled and finely minced
Large pinch of sea salt
1 egg yolk at room temperature
1/2 of a lemon, juiced
2/3 cup of pure olive oil (not extra virgin)
1/3 cup of Extra Virgin Olive Oil
Freshly ground black pepper
Instructions
In a bowl combine the minced garlic and salt.
Then generously stir in the egg yolk and lemon juice.
Then slowly pour in the pure olive oil in a thin steady stream, followed by the extra virgin olive oil in the same manner.
Lastly, mix in the freshly ground black pepper and a bit more sea salt.
