But oh, lord, is it delicious!

Ingredients
2 teaspoons bacon fat
½ medium onion, chopped fine
2 medium potatoes, medium dice
2 teaspoons flour
1 teaspoon thyme
1 teaspoon Old Bay
2 cups vegetable, fish or chicken stock
salt
pepper
1 cup milk
1 cup cream
1 10oz can whole baby clams
1 6.5oz can chopped clams
1 tablespoon butter
Instructions
Melt the bacon fat in the bottom of a 4 quart pot (Or alternatively, render the fat out of two strips of bacon). Add onion and potato and cook over medium-high heat for 10 minutes, until potatoes are slightly brown. (Things will stick to the bottom of your pan, unless they are burning, don’t worry about it)
Add flour, thyme and Old Bay, stir together. Pour in stock and let everything simmer for 10 minutes.
Salt a bit, and add some pepper. Then add in milk and cream. Bring back to a boil and add in clams. Float butter on the top of soup, by the time the butter is melted the soup should be ready to serve.
