Almond Encrusted Spanish Seitan
Ingredients
1 recipe chick'n seitan, prepared
.5 cup flour
.5 cup pastry flour
2 tsp smoked paprika
3/4 cup Almonds
1/4 cup panko bread crumbs
1/4 cup Fresh Parsley, Chopped
1/2 cup soy milk
1 orange
2 Tbsp margarine
2 Tbsp dry sherry
olive oil for frying
Instructions
Mix flour, pastry flour and paprika in a small bowl. Pour mixture onto a small plate for breading.
Put almonds and bread crumbs in a food processor and grind until almonds are fine crumbs. Add parsley to the food processor and pulse until mixed throughout. Place mixture onto a different small plate for breading.
Pour soy milk onto a separate plate for breading.
Dip seitan breast in the flour mixture, then the soy milk and then the almond mixture.
Lightly brown the seitan breasts on both sides in a frying pan.
Sauce:
Slice an orange into thin slices and saute for 5 minutes. Add the sherry and margarine and saute until heated through.
Pour sauce over seitan and serve with quinoa.
