A lasagna recipe with half the fat and all the flavor.

Ingredients
2 boxes or 2 rolls frozen lasagna noodles (the kind you boil)
1 med tub small curd cottage cheese low fat
1lrg tub ricotta cheese
8 cups mozzarella shredded
1 med tub of non-fat sour cream
2 eggs
2 quarts homemade spaghetti sauce
I use jars for less dishes.... usually sun dried tomato and mushroom variety
8oz portabella mushrooms
1 large sweet onion
2 heads fresh broccoli diced
1 zucchini (optional)
Instructions
Cheese mix
mix cottage cheese and ricotta together add 2 eggs and diced broccoli
Noodles
Place in large pot half full of water with 1/4 cup of oil (keeps them from sticking together)
boil
strain rinse with cold water
Combine
In 13×9 pan lay down 1 layer of noodles
place two scoops of cheese mix and spread to the edges
spoon sauce mixture on and spread to edges
sprinkle with mozzarella
lay down another layer of noodles
repeat till you have 3-4 layers of noodles
top off with more cheese mixture and sauce mixture
cover with mozzarella
Bake at 350 degrees for 90 minutes
You can also split this recipe up into 4 small square foil cake pans and freeze uncooked making 4 lasagnas that will serve 3 people.
