1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1 cup low-fat buttermilk
1/2 Tbsp vegetable oil
1 large egg
1/2 cup crushed walnuts or almonds
1 Granny Smith apple, peeled and diced
Combine both flours, sugar, baking powder, baking soda, salt, and cinnamon in a bowl. In a seperate bowl, combine the buttermilk, oil and egg. Combing the wet and dry mixtures and add in nuts, stirring until blended but still slightly lumpy.
Coat pan or griddle with cooking spray on medium heat. Spoon about 1/4 cup of batter per pancake onto pan. Place small chunks of apple on raw pancake batter. Turn pancakes over when egdes are cooked and tops are bubbly. Serve with butter and syrup!
