Apple Topping - TastyPlanner.com

This is an apple topping for pacakes or waffles (peaches can be substituted for the apples). The recipe comes from Prevention’s book “The Sugar Solution Cookbook” which contains recipes with low glycemic index levels.
Makes 2 cups. Per 1/2 cup: 85 cal, 0.2g Protein, 22g Carbs, 0.3g fat, 0 mg Cholesterol, 1 mg sodium, 1.9 g dietary fiber.

Ingredients
3 cups apples, peeled & thinly sliced
2 tablespoons Apple or White Grape Juice
2 tablespoons honey
1/8 teaspoon ground nutmeg
Instructions
In a medium saucepan over low heat, add the apples, juice, honey, and nutmet.
Cook, stirring occasionally, for 3 minutes. Cover the pan and cook for 5 minutes, or until the fruit is softened.
Cool slightly before serving.
