Apple Walnut Cake - TastyPlanner.com

A gently spiced cake that is wonderful for a not-overly-sweet dessert.
Ingredients
3 eggs, beaten
2 c sugar (can cut in half)
1/2 c oil
2 tsp vanilla
2 C flour
2 tsp soda
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
4 c diced peeled apples
1 c chopped walnuts
Instructions
In a large mixing bowl, beat together eggs, oil, sugar, and vanilla.
Combine flour, soda, cinnamon, nutmeg, and salt. Mix into batter.
Fold in apples and nuts.
Spread into a 13×9 pan. Bake at 325 for 50-60 minutes or until cake tests done. Cool.
