Ingredients
3 cups dry rice
1/2 cup apricot preserves
2 tbs soy sauce
1 Tbs chicken broth or sherry
1 tbs vegetable oil
1 tbs corn starch
1 tsp minced garlic
1/4 tsp gd ginger
1 1/2 lb boneless, skinless chicken breasts, cut in strips
1 med green pepper, chopped
1/2 cup salted cashews
Instructions
Cook rice according to package directions.
While rice is cooking, slice chicken & chop green pepper, set aside. In large bowl, combine next 7 ingredients. Add chicken and toss to coat. Trasfer to a shallow microwave-safe dish. Cover and microwave on high for 3 min., stirring once.
Add green pepper and cashews. Cover and microwave on high for 2-4 min or until chicken juices run clear, stirring once. Let stand for 3 min. Serve over rice.
