Huge recipe, but it freezes so nicely. Tastes better than restaurant rice, IMO.
Ingredients
1.5 cups dry long-grain white rice
3 Tb corn oil
2/3 cup canned Tomato Sauce
1/4 cup onion, diced
1 clove garlic, finely minced
3.5 cups chicken broth
1 Tb. cumin
1 tsp. black pepper
Instructions
Soak the rice:
In a large bowl, pour hot water over rice and let stand 25 minutes. Drain into a sieve and rise well in cold water. Shake sieve and let drain a while.
Brown the rice:
Heat oil in a skillet. Stir in rice making sure grains are well coated with oil. Saute rice for about 10 minutes until golden, stirring often.
Cook the rice:
Stir in tomato, onion, garlic, cumin, salt, and pepper. Cook for 3 minutes or until almost dry, stirring constantly.
Stir in broth and then do not stir again until done cooking. Reduce heat to medium-low, cook uncovered, for 10 minutes. Cover and cook for 5 minutes. Remove from heat and let stand, covered, for 30 minutes.
