Ingredients
1 1/4 lbs Boneless Skinless Chicken Breast
1 Scallion
1 Small Chipotle in Abodo
1 Can (8 ounce) no-salt-added tomato sauce
1 1/2 tablespoons peanut butter
1 tablespoon water
3/4 teaspoon chili powder
1/2 teaspoon ground cinnamon
1/2 teaspoon instant coffee granules
1 Lime
1 cup red pepper slices (about 4 ounces)
1 package (8 ounces) stringed snow or sugar snap peas
6 tortillas
Instructions
PART 1 COOK THE GRILLED CHICKEN WITH PEANUT SAUCE
1. Spray a grill pan with olive oil Pam and heat over medium heat. Season the Chicken with Salt and Pepper. Place the chicken in the pan and grill for 8 – 10 minutes, turning once, until cooked through.
2. While the chicken cooks, prepare the sauce: Trim the scallion and cut it into 1-inch pieces. Seed the chipotle chile. Place the scallion and chili in a blender or mini-processor. Add the tomato sauce, peanut butter, water, chili powder, cinnamon, and coffee granules. Process until smooth. Scrape the sauce into a small saucepan. Bring to a simmer over medium-high heat and simmer 4 minutes, stirring ocasionally. Cover to keep warm.
PART 2 WHILE THE CHICKEN COOKS, MAKE THE STEAMED SNOW PEAS AND RED PEPPERS
1. Cut the lime into 8 wedges to serve with the meal
2. Place the red pepper slices in a microwave-safe disc and cover with a lid or venter plastic wrap. Microwave on High for 2-3 minutes. Stir in snow peas or sugar snap peas and microwave on high for 2 minutes longer, until the snow peas are tender and bright green. Season with salt and pepper.
PART 3 SERVE
1. Place tortillas on a plate. Cover with a paper towel and microwave on high for 40 seconds.
2. Chop the chicken into small pieces. Spoon chicken, peas and peppers into the tortillas. Squeeze a lime wedge over each of the fajitas and spread some sauce over the top.
3. OPTIONAL – Add low fat Mexican cheese to the fajitas.
