Authentic Cincinnati Chili - TastyPlanner.com
Chef: Chris Saylor (Pro Member)
Growing up in Cincinnati, our version of this chili is the one thing I miss. This recipe was posted in the Cincinnati Enquirer in the early 70’s. Serve over spaghetti or on hotdogs, with onions, beans and cheddar cheese.

Ingredients
2 pounds lean ground beef
1 quart water
2 onions, finely chopped
1 (15 ounce) can tomato sauce
2 tablespoons vinegar
2 teaspoons Worcestershire sauce
4 cloves garlic, minced
1/2 (1 ounce) square unsweetened chocolate
1/4 cup chili powder
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground cayenne pepper
5 whole cloves
5 whole Allspice berries
1 bay leaf
Instructions
In a 4 quart soup pot, cover the ground beef with the water and start bringing it to a boil. While the water is heating up, mash the ground beef into small chunks. Slowly boil the meat until done, about 30 minutes. Remove from heat and allow to cool in the refrigerator for 3 hours.
Once the fat has congealed, skim the solid fat off the top. Add the rest of the ingredients and bring to a boil. Reduce heat and simmer for 3 hours. Add water as necessary to prevent burning and for desired consistency.
