Healthy and easy version of this tasty treat!
Ingredients
2 cups dried chickpeas, soaked overnight
1 medium onion, finely chopped
6 cloves garlic, crushed
1/2 cup cilantro, chopped
1/2 cup parsley, chopped
1 T baking powder
2 t ground coriander
2 t ground cumin
1/2 t cayenne pepper
1 t coarse salt
1/2 t ground black pepper
Instructions
Preheat oven to 350 degrees
Drain chickpeas, add to food processor and blend till becomes a nice mealy texture. Add the rest of the ingredients, blend only till thoroughly mixed. Should be a nice green color.
Refrigerate batter for at least one hour, until firm. Remove from fridge and shape batter into 1-inch balls. Place on pan and put into oven for 10 minutes. Remove pan and flip patties over, they should be toasty on the bottom side. Use the spatula to slightly flatten the patties, return to the oven. After another 10 minutes, remove from oven and cool before serving.

This recipe doesn’t work at all. It’s very tasty, nice and spicy, but the falafel turned out like mush. I tried salvaging the baked goo by frying it and it fell apart.
Sorry this did not work for you, it is a traditional type recipe not one I made up (check Tyler Florence, Food Network). Maybe there was too much water with the chickpeas, they should be drained very well! I froze this in small containers and defrost them when I feel like having some!
Here is my food blog that shows how it looks –

Thank you for the advice. I will try with whole chickpeas next time instead of the canned (I am dedicated to making thise work). Maybe those are starchier and so hold together better? The extra pictures you’ve posted certainly look firmer than what I came up from. For other experimenteurs, I cannot emphasize enough how delicious the goo is. I ended up spreading it warm on pitas covered with goat’s cheese. I will likely keep how I made it as a warm dip/spread appetizer.
