Here is an all in one and easy to prepare meal to please any white fish lover.

Ingredients
-Non-stick Baking Pan (2in tall or more ; 13x9 pan usually good for 4-8 pieces of fish)
-2 Fish Fillets per person depending on size of fillet(Tilapia, Sole, Flounder, or any thin flaky white fish that is similar)
-Potatoes
-Onion
-1 Small Package of Baby Bella Mushrooms (pre-sliced preferred, but whatever is available or cheaper)
-Salt & Pepper
-olive oil
-Pam Spray
Instructions
Preheat oven to 350F. Spray the pan with a light coating of Pam.
When preparing dinner, I generally prefer a 4 (potatoes) to 1 ratio (onions), in order to not be overwhelmed by onions.
Exact measurements not required, and should be used as a guide. Slice Potatoes and Onions 1/8 to 1/4 of an inch thick. If Mushrooms are unsliced, slice them at similar thickness to potatoes.
Mix all 3 together and season with Olive Oil, Salt, and Pepper. Seasoning should be to your preference. Vegetables should be coated but not sitting in a lot of oil or over salted. Evenly spread the seasoned vegetables across the pan (layering depending on how much you made).
Bake vegetables for 20-30 minutes or until cooked. Once cooked, place fish fillets on top of vegetables. Season the top of fish with salt and pepper. Cook the fish for 5 – 10 minutes or until cooked. Thin fillets will become flaky/cooked quicker, thicker fillets may need more than 10 minutes.
