Healthy side dish
Ingredients
4 medium summer squash
1 small white onion, chopped
4 cloves garlic, minced
2 tsp. sea-salt
2 tsp Lemon Pepper
1 T extra-virgin Olive Oil
1/2 cup feta cheese
2 tsp. basil
Instructions
Preheat oven to 375 F
Cut zucchini into half-moon pieces about 1/2 inch thick. Mix together with onions, olive oil, salt, lemon pepper, basil and garlic.
Coat a roasting pan with olive oil. Arrange vegetables on roasting pan and crumble feta cheese over. Bake about 25 minutes or until the vegetables are barely tender. Serve hot.
