Banana Flax Seed Muffins - TastyPlanner.com

These tender muffins are full of protein and low in fat.
Ingredients
2 c. flour (I use half white/half wheat)
3 tbs. milled flax seed
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 egg
1/2 c. brown sugar
3 mashed ripe bananas
2 tbs. olive oil
1 tsp. vanilla extract
Instructions
Preheat oven to 375.
Combine dry ingredients in a mixing bowl.
Blend the egg, sugar, banana, oil, and vanilla together in a small bowl.
Mix the banana ingredients into the mixing bowl with the flour. Gently stir until combined, but do not overmix. The batter will be lumpy!
Divide the batter into 12 paper muffin cups in a muffin tin. Bake for 20 minutes at 375. Eat while warm!
